Caesar Dressing (the best!)
Place in a food processor: 3 eggs 1 large clove garlic 1 tsp capers 5 small cornichons 6 anchovy fillets (Ortiz brand preferred)
Blitz till all chopped up and slowly add: 1 ltr canola oil till thick
Then add: 2 Tbsp oyster sauce 3 Tbsp grated parmesan Sherry vinegar to taste Salt and Pepper to taste Thin with water if needed
I like mine slightly over salted as the lettuce tends to take away the flavour
