Mayonnaise

3 egg yolks
1 tsp mustard
10 ml sherry vinegar
1 tsp fresh lemon juice
150 ml canola oli
150 ml rice bran oil
salt and pepper to taste

Beat egg yolks and mustard in a mixer
Slowly drizzle in the oils to make a thick emulsion
Add the vinegar and lemon juice
Season with salt and pepper to taste.
