Apricot Muesli Bars
1 cup chopped dried apricots 1/2 cup water 150g butter 3/4 cup brown sugar 1 1/4 cup flour 1 1/2 tsp baking powder 1 cup rolled oats 1 cup white chocolate bits
Preheat oven to 180 Line a 30cm square tin with baking paper Put apricots and water in to a saucepan and simmer till all the water has been absorbed Remove from the heat and add butter and sugar Stir and leave to cool Add the dry ingredients Place into tin and bake for 35 mins or until golden brown Leave in the tin for 10 minutes before cooling on a rack.
