Gin and Lemon Cake
Servings: 1 23cm cake Caitlin Cobb
Ingredients: • 120g butter • 150g caster sugar • 2 large eggs • 120g self rising flour • 3 tbsp gin • 2 tsp. finely grated lemon zest
Glaze: • 1 cup icing sugar • 1bsp gin • ½ tbsp lemon juice
Preheat oven to 190 C. Cream butter and sugar. Add eggs one at a time then fold in sifted flour. Stir in gin and lemon zest. Spoon mixture into cake tin. Bake 20-30 mins.
Leave to cool.
Mix glaze ingredients together and spread over the cake.
