Lumberjack Cake
Mix and leave to cool: • 2 granny smiths peeled and chopped • 185g chopped dates (or prunes and use less water) • 1 tsp soda • 1 cup boiling water
Cream: • 125g butter • 1 cup sugar
Add: • 1 egg • 1 tsp vanilla
Add alternating with apples: • 1 ½ cup flour • ¼ tsp salt
Bake 1 hour and 10 mins at 180.
Melt together and pour over top: • ½ cup brown sugar • 60g butter • 1/3 cup milk • 60g shredded coconut
Cook a further 15-20 mins till golden.
