Quesadilla

300g cooked spinach
150g goat cheese
50g grated raclette
2 Tbs. Thai sweet chilli sauce
1 pkt flour tortillas

Method

Chop spinach and season well with salt and pepper.
Brush tortillas with sweet chilli sauce.
Distribute the spinach over the sauce.
Then the goat cheese thinly sliced followed by the raclette.
Finish with a light grind of pepper and top with another tortilla circle.

Pan fry in a little olive oil till golden brown and the cheese has melted.

Place on plate, top with lightly dressed salad leaves and sprinkle sliced olives around the quesadilla.
