Indian potatoes
Serves 4
- 3 large potatoes (agria). Peeled, cut and parboiled for 5 mins. Drain - 1/2 tsp black mustard seeds (dry fry till they start to pop) -1/2tsp cumin seeds -1/8 tsp turmeric -2 tbsp veg oil -add potatoes Salt and pepper to taste
Sauté and pop in the oven to finish cooking. Toss fresh chopped coriander over the top and serve.
